Split Pea Soup

A wholesome and comforting soup, full of flavor and nutrientsperfect for a cozy meal!

Ingredients:

2 cups dried split peas rinsed

6 cups vegetable broth

1 medium onion diced

2 carrots peeled and diced

2 celery stalks diced

3 cloves garlic minced

1 tsp dried thyme

1 bay leaf

Salt and pepper to taste


1 tbsp olive oil

Fresh parsley for garnish

Instructions:

In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery, and cook until softened, about 5-7 minutes.

Add the garlic, thyme, and bay leaf, stirring for 1-2 minutes to release the flavors.

Pour in the vegetable broth and split peas, bringing the mixture to a boil.

Reduce the heat, cover, and simmer for 1-1.5 hours, or until the peas are tender and the soup has thickened.

Remove the bay leaf, and season with salt and pepper to taste.

Use an immersion blender to puree the soup slightly, or leave it chunky for texture.

Serve hot, garnished with fresh parsley.
