Spiced Rice Pudding
Ingredients:
– 1 cup jasmine rice
– 4 cups whole milk
– 1 cup coconut milk
– cup granulated sugar
– 1 teaspoon ground cinnamon
– teaspoon ground nutmeg
– teaspoon ground cardamom
– 1 teaspoon vanilla extract
– teaspoon salt
– Optional toppings: raisins, chopped nuts, or ground cinnamon
Directions:
1. Cook the Rice: In a medium saucepan, combine the jasmine rice with 2 cups of water. Bring it to a boil over medium heat, then reduce the heat to low. Cover and simmer for 10-12 minutes, or until the rice is fully cooked and the water is absorbed.
2. Add the Milk and Spices: Stir in the whole milk, coconut milk, granulated sugar, ground cinnamon, nutmeg, cardamom, vanilla extract, and salt. Bring the mixture to a gentle boil, then reduce the heat to low.
3. Simmer: Let the rice mixture simmer, uncovered, for about 20-25 minutes, stirring frequently, until the pudding thickens to a creamy consistency.
4. Serve: Once the rice pudding has thickened, remove it from the heat. Allow it to cool slightly, then serve warm or chilled, topped with your choice of raisins, chopped nuts, or a dusting of cinnamon.
