Spanish Cod
Ingredients:
4 cod fillets
2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, chopped
2 tomatoes, chopped
1/2 tsp smoked paprika
1/2 tsp cumin
1/4 tsp cayenne pepper optional
1/2 cup vegetable or fish broth
1/4 cup green olives, chopped
Fresh parsley, chopped for garnish
Salt and pepper, to taste
Instructions:
1 Heat olive oil in a large skillet over medium heat. Add the onion, garlic, and bell pepper. Sauté until softened, about 5-7 minutes.
2 Add the chopped tomatoes, paprika, cumin, and cayenne pepper if using. Stir and cook until the tomatoes soften and release their juices, about 5 minutes.
3 Pour in the broth and bring to a simmer. Season with salt and pepper.
4 Add the cod fillets to the skillet, spooning some of the sauce over the fish. Cover and cook for 8-10 minutes, until the cod is cooked through and flakes easily.
5 Stir in the green olives and cook for another 2-3 minutes.
6 Garnish with fresh parsley before serving.
