Southwest Breakfast Burritos

Ingredients:

4 large flour tortillas

6 large eggs

1/2 cup milk

1 tbsp olive oil

1/2 cup black beans, drained and rinsed

1/2 cup diced bell peppers red, green, or yellow

1/2 cup diced onion

1/2 cup shredded cheddar cheese

1/4 cup salsa or pico de gallo

1/2 tsp chili powder


1/4 tsp cumin

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Instructions:

1 Heat olive oil in a skillet over medium heat. Add bell peppers and onions and sauté until softened about 5 minutes.

2 In a bowl, whisk together eggs, milk, chili powder, cumin, salt, and pepper. Pour the mixture into the skillet with the veggies and scramble until cooked through.

3 Stir in the black beans and cook for another 1-2 minutes. Remove from heat.

4 Warm the tortillas in a skillet or microwave.

5 Spoon the scrambled egg mixture into the center of each tortilla. Top with shredded cheese and a spoonful of salsa or pico de gallo.

6 Roll up the tortillas, folding in the sides and rolling tightly.

7 Serve warm, garnished with fresh cilantro if desired.
