Snickerdoodle Cobbler
Ingredients:
– 1 cup unsalted butter, melted
– 1 1/2 cups granulated sugar
– 1 1/2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 1 1/2 cups whole milk
– 1 tablespoon vanilla extract
– 1/2 cup brown sugar, packed
– 1 tablespoon ground cinnamon
– 1 1/2 cups boiling water
Directions:
1. Preheat the Oven: Preheat your oven to 350F 175C. Pour the melted butter into a 9×13-inch baking dish, spreading it evenly.
2. Prepare the Batter: In a large mixing bowl, whisk together 1 cup of the granulated sugar, flour, baking powder, and salt. Stir in the milk and vanilla extract until the batter is smooth. Pour the batter evenly over the melted butter in the baking dishdo not stir.
3. Make the Cinnamon Sugar Topping: In a small bowl, mix together the remaining 1/2 cup granulated sugar, brown sugar, and cinnamon. Sprinkle the cinnamon sugar mixture evenly over the batter.
4. Add Boiling Water: Slowly and carefully pour the boiling water over the top of the cobbler. Again, do not stir. The water will help form a gooey, cinnamon-sugar layer as it bakes.
5. Bake the Cobbler: Place the cobbler in the preheated oven and bake for 40-45 minutes, or until the top is golden and set, and the edges are bubbling.
6. Serve: Let the cobbler cool for about 10 minutes before serving. This snickerdoodle cobbler is perfect on its own or with a scoop of vanilla ice cream!
