Smoky Black Bean Burgers

Ingredients:

2 cans 15 oz each black beans, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs

1/4 cup grated carrot

1 tbsp smoked paprika

1 tsp ground cumin

1 tbsp soy sauce

1 tbsp olive oil

Salt and pepper to taste


1 egg or flax egg for vegan option

2 tbsp cilantro, chopped optional

Burger buns and toppings of your choice lettuce, tomato, avocado, etc.

Instructions:

1 In a large bowl, mash the black beans with a fork or potato masher, leaving some whole for texture.

2 Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until softened about 5 minutes.

3 Add the cooked onion and garlic to the mashed beans, along with breadcrumbs, grated carrot, smoked paprika, cumin, soy sauce, and cilantro if using. Season with salt and pepper to taste.

4 Mix well and add the egg or flax egg to help bind the mixture. Stir until combined.

5 Shape the mixture into 4-6 patties.

6 Heat a non-stick pan or grill over medium heat and cook the patties for 4-5 minutes per side, until golden and crispy.

7 Serve the burgers on buns with your favorite toppings and enjoy!
