Slow Cooker Spanish Beef Stew
Ingredients:
2 lbs beef chuck, cut into cubes
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
2 tomatoes, chopped
2 cups beef broth
1 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp cumin
1 bay leaf
Salt and pepper, to taste
1 cup frozen peas
Fresh parsley, chopped for garnish
Instructions:
1 In a skillet, brown the beef cubes on all sides over medium heat, then transfer to the slow cooker.
2 Add the onion, garlic, bell pepper, tomatoes, beef broth, smoked paprika, thyme, cumin, bay leaf, salt, and pepper to the slow cooker.
3 Stir everything together and set the slow cooker to low for 7-8 hours or high for 4 hours.
4 About 30 minutes before serving, add the frozen peas.
5 Once cooked, remove the bay leaf and garnish with fresh parsley before serving.
