Slow Cooker Chicken and Rice
Ingredients:
1.5 lbs boneless, skinless chicken breasts or thighs
1 cup long-grain white rice uncooked
3 cups chicken broth
1 cup diced carrots
1 cup diced celery
1 small onion, diced
3 garlic cloves, minced
1/2 cup shredded cheddar cheese optional
1 tsp paprika
1 tsp dried thyme
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions:
1 Place the chicken breasts or thighs in the slow cooker. Season with paprika, thyme, salt, and pepper.
2 Add the rice, carrots, celery, onion, and garlic around the chicken. Pour the chicken broth evenly over everything.
3 Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the rice is tender and chicken is cooked through.
4 Shred the chicken directly in the slow cooker or leave it whole as desired. Stir everything together.
5 Optional: Sprinkle shredded cheddar cheese on top and allow it to melt.
6 Garnish with fresh parsley, serve hot, and enjoy!
