Slow Cooker Cheeseburger Soup
Ingredients:
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
4 cups chicken or beef broth
2 cups potatoes, peeled and diced
1 cup shredded carrots
1/2 cup celery, diced
2 cups shredded cheddar cheese
1 cup heavy cream
2 tbsp all-purpose flour optional, for thickening
Salt and pepper, to taste
Cooked bacon bits optional, for garnish
Green onions optional, for garnish
Instructions:
1 Brown the ground beef in a skillet, then transfer it to your slow cooker.
2 Add the onions, garlic, potatoes, carrots, celery, and broth to the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours, until vegetables are tender.
3 If thickening, whisk the flour with a little water to form a slurry and stir it into the soup. Cook for an additional 15 minutes.
4 Stir in the heavy cream and shredded cheddar cheese until melted and smooth.
5 Season with salt and pepper to taste. Top with bacon bits and green onions if desired. Serve warm and enjoy!
