Sheet Pan Chicken with Mozzarella, Pesto, and Broccoli

A flavorful and satisfying meal with pesto-coated chicken, melty mozzarella, and roasted broccoliall in one pan!

Ingredients:

4 boneless, skinless chicken breasts

1 1/2 cups broccoli florets

1/4 cup pesto sauce store-bought or homemade

1 tbsp olive oil

1 tsp garlic powder

1/2 tsp dried oregano

Salt and pepper to taste


1 cup shredded mozzarella cheese

Fresh basil for garnish

Instructions:

Preheat your oven to 400F 200C. Line a large sheet pan with parchment paper.

Toss the broccoli florets with olive oil, garlic powder, oregano, salt, and pepper. Spread them evenly on one side of the sheet pan.

Coat the chicken breasts with pesto sauce and place them on the other side of the sheet pan.

Bake for 20-25 minutes, or until the chicken is fully cooked internal temperature of 165F or 74C and the broccoli is tender.

Remove the pan from the oven, sprinkle shredded mozzarella over the chicken, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Garnish with fresh basil and serve hot.
