Sheet Pan Chicken Fajitas
A vibrant, easy-to-make meal with juicy chicken and perfectly seasoned peppers and onions!
Ingredients:
4 boneless, skinless chicken breasts sliced into strips
2 bell peppers assorted colors, sliced
1 large onion sliced
3 tbsp olive oil
1 tbsp chili powder
1 tsp paprika
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
Tortillas, lime wedges, and toppings e.g., sour cream, salsa, guacamole, shredded cheese
Instructions:
Preheat your oven to 400F 200C. Line a large sheet pan with parchment paper.
In a large bowl, mix olive oil, chili powder, paprika, garlic powder, cumin, oregano, salt, and black pepper. Add chicken, peppers, and onions, and toss until well coated.
Spread the mixture evenly on the sheet pan in a single layer.
Bake for 20-25 minutes, tossing halfway through, until the chicken is fully cooked and the vegetables are tender.
Serve the chicken and vegetables with warm tortillas and your favorite toppings. Squeeze fresh lime juice over the fajitas for a burst of flavor!
