Savory Garlic Butter Beef Medallions
Ingredients:
1 lb beef tenderloin medallions about 1-inch thick
Salt and freshly ground black pepper, to taste
3 tbsp unsalted butter, divided
1 tbsp olive oil
3 cloves garlic, minced
1 tsp fresh thyme leaves
1 tsp fresh rosemary, chopped
1 tbsp fresh parsley, chopped for garnish
Directions:
Season the Beef: Pat the beef medallions dry with paper towels. Season both sides generously with salt and black pepper.
Sear the Medallions: In a large skillet, heat 1 tbsp butter and olive oil over medium-high heat. Add the beef medallions and sear for 3-4 minutes per side for medium-rare, adjusting the time based on your desired doneness. Remove the beef from the skillet and set aside to rest.
Make Garlic Butter Sauce: In the same skillet, add the remaining 2 tbsp butter. Add minced garlic, thyme, and rosemary, and cook for 1-2 minutes until fragrant, stirring constantly.
Combine and Serve: Return the beef medallions to the skillet, spooning the garlic butter sauce over the top. Allow the flavors to blend for an additional minute. Serve immediately, garnished with fresh parsley for a touch of color.
