Sausage Breakfast Casserole
A delicious and hearty breakfast casserole thats perfect for family gatherings or a weekend meal!
Ingredients:
1 lb chicken sausage cooked and crumbled
6 large eggs
2 cups milk or dairy-free alternative
1 cup shredded cheddar cheese
1 cup hash browns frozen or freshly made
1/2 cup bell peppers diced
1/2 cup onions diced
1/2 tsp garlic powder
1 tsp dried thyme
Salt and pepper to taste
1 cup fresh spinach optional, for added greens
Instructions:
Preheat your oven to 350F 175C and grease a 9×13-inch baking dish.
In a large skillet, cook the chicken sausage over medium heat until browned and crumbled, about 5-7 minutes. Remove and set aside.
In the same skillet, sauté the bell peppers, onions, and spinach if using until softened, about 4-5 minutes.
In a large mixing bowl, whisk together the eggs, milk, garlic powder, thyme, salt, and pepper.
In the prepared baking dish, layer the hash browns, cooked sausage, sautéed vegetables, and shredded cheddar cheese.
Pour the egg mixture over the layers in the baking dish, ensuring everything is evenly covered.
Bake uncovered for 40-45 minutes, or until the casserole is set in the center and lightly golden on top.
Let it cool slightly before serving.
