Saltine Toffee Cookies
Ingredients:
– 4 ounces saltine crackers 1 sleeve
– 1 cup unsalted butter
– 1 cup packed brown sugar
– 2 cups semisweet chocolate chips
– 1/2 cup chopped pecans optional
Directions:
1. Preheat the Oven: Preheat your oven to 400F 200C. Line a baking sheet with parchment paper or aluminum foil.
2. Prepare the Crackers: Arrange the saltine crackers in a single layer on the prepared baking sheet, covering the entire surface.
3. Make the Toffee: In a saucepan over medium heat, melt the butter and brown sugar together. Stir constantly until the mixture comes to a boil, then continue boiling for 3 minutes, stirring occasionally.
4. Pour the Toffee: Carefully pour the hot toffee mixture over the saltine crackers, spreading it evenly with a spatula.
5. Bake: Bake the crackers and toffee in the preheated oven for 5-6 minutes, until the toffee is bubbly.
6. Add Chocolate: Remove from the oven and immediately sprinkle the chocolate chips over the toffee. Let them sit for 5 minutes to melt, then spread the melted chocolate evenly over the toffee layer.
7. Optional Topping: Sprinkle chopped pecans over the melted chocolate if desired.
8. Cool and Serve: Allow the toffee to cool completely, then break it into pieces and enjoy!
