Roast Turkey and Cranberry Stuffed Sweet Potatoes
Ingredients:
4 medium sweet potatoes
2 cups cooked, shredded turkey or chicken
1/2 cup cranberry sauce homemade or store-bought
1/2 cup shredded mozzarella or Gruyère cheese optional, for added creaminess
1/4 cup chopped pecans or walnuts optional, for crunch
Salt and pepper, to taste
Fresh rosemary or parsley, chopped for garnish
Instructions:
Bake the Sweet Potatoes:
Preheat your oven to 400F 200C.
Wash and dry the sweet potatoes, then pierce each one a few times with a fork.
Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until they are tender and easily pierced with a fork.
Prepare the Filling:
In a bowl, combine the shredded turkey, cranberry sauce, and cheese if using. Season with salt and pepper to taste.
Stuff the Sweet Potatoes:
Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
Cut a slit down the center of each sweet potato and gently fluff the insides with a fork.
Spoon the turkey and cranberry mixture into the center of each sweet potato.
Optional Toasting:
Return the stuffed sweet potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and the filling is heated through.
Serve:
Garnish with chopped pecans or walnuts for crunch and a sprinkle of fresh rosemary or parsley. Serve warm and enjoy!
