Ricotta Cookies

Ingredients:

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup ricotta cheese

2 large eggs

1 tsp vanilla extract

Zest of 1 lemon optional, for extra flavor

1/4 cup milk

For the Glaze optional:


1 cup powdered sugar

1-2 tbsp milk

1/2 tsp vanilla extract

Instructions:

1 Preheat your oven to 350F 175C and line baking sheets with parchment paper.

2 In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3 In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the ricotta cheese, eggs, vanilla extract, and lemon zest if using, and mix until smooth.

4 Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.

5 Drop rounded tablespoonfuls of dough onto the prepared baking sheets. Bake for 10-12 minutes, or until the edges are lightly golden.

6 Remove the cookies from the oven and allow them to cool completely.

7 For the glaze, whisk together the powdered sugar, milk, and vanilla extract. Drizzle over the cooled cookies.

8 Allow the glaze to set and enjoy these soft, melt-in-your-mouth cookies!
