Rich and Simple French Onion Soup
Ingredients:
4 large onions, thinly sliced
3 tbsp olive oil or vegan butter
2 cloves garlic, minced
1 tbsp all-purpose flour optional for thickening
1/2 cup dry white wine vegan-friendly or vegetable broth for substitution
6 cups vegetable broth
2 tsp dried thyme
1 bay leaf
Salt and pepper to taste
4-6 slices of crusty bread
1 cup shredded vegan cheese optional for topping
Instructions:
1 Heat olive oil in a large pot over medium heat. Add the sliced onions and sauté, stirring occasionally, for 25-30 minutes until deeply caramelized and golden brown.
2 Add minced garlic and cook for 1 minute. Stir in the flour if using, cooking for another minute to thicken slightly.
3 Deglaze the pot with white wine or extra vegetable broth, scraping up any browned bits.
4 Add the vegetable broth, thyme, and bay leaf. Season with salt and pepper. Bring to a simmer and cook for 20-25 minutes.
5 Preheat the oven broiler. Place the bread slices on a baking sheet, sprinkle with vegan cheese if using, and broil until golden and bubbly.
6 Remove the bay leaf from the soup and ladle into bowls. Top with cheesy bread and serve hot.
