Pineapple Chicken
Ingredients:
1 lb boneless, skinless chicken breast, cut into 1-inch cubes
1 tbsp oil vegetable or olive oil
2 cups pineapple, diced
1 red bell pepper, diced
1/2 red onion, diced
2 garlic cloves, minced
1 tsp grated ginger
1 green onion, diced for garnish
1 tsp sesame seeds for garnish
Salt and pepper, to taste
For the Sauce:
1 cup pineapple juice
1/2 cup chicken broth
1/4 cup soy sauce
1 tbsp brown sugar
1 tbsp cornstarch
Directions:
Make the Sauce:
In a medium bowl, whisk together the pineapple juice, chicken broth, soy sauce, brown sugar, and cornstarch until smooth. Set aside.
Cook the Chicken:
In a large skillet, heat the oil over medium-high heat. Add the chicken cubes and season with salt and pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through.
Add Vegetables:
Add the diced pineapple, red bell pepper, and red onion to the skillet. Cook for 2-3 minutes, stirring occasionally, until the pineapple and bell pepper start to soften.
Add Garlic and Ginger:
Stir in the minced garlic and grated ginger, and cook for an additional 30 seconds to 1 minute until fragrant.
Add Sauce and Simmer:
Pour the prepared sauce into the skillet, stirring constantly as it begins to thicken. Let it cook for about 2-3 minutes, or until the sauce has thickened to your desired consistency.
Serve:
Serve the pineapple chicken immediately, topped with diced green onions and sesame seeds. Enjoy with rice or noodles if desired!
Storage:
Refrigerate leftovers in an airtight container for up to 3 days.
