Pesto Pasta
Ingredients:
12 oz spaghetti, linguine, or your favorite pasta
1/2 cup fresh basil pesto store-bought or homemade
1/4 cup pasta water reserved after cooking pasta
2 tbsp olive oil
2 tbsp grated Parmesan cheese optional
Salt and pepper, to taste
Cherry tomatoes or pine nuts, for garnish optional
Instructions:
1 Cook the pasta according to package instructions. Reserve 1/4 cup of the pasta water and drain the rest.
2 In a large skillet, heat olive oil over low heat. Add the basil pesto and the reserved pasta water, stirring to combine.
3 Toss the cooked pasta in the pesto mixture until evenly coated. Season with salt and pepper to taste.
4 Serve hot, garnished with Parmesan, cherry tomatoes, or pine nuts if desired. Enjoy this fresh and flavorful dish!
