Pecan Sandie Truffles

Ingredients:

1 package Pecan Sandies cookies 13 ounces

8 ounces cream cheese, softened

1/3 cup chopped pecans, divided

1/3 cup powdered sugar

16 ounces white chocolate

Instructions:

Prepare the Mixture:

Break the Pecan Sandies cookies into large chunks and place them in a stand mixer bowl.

Add softened cream cheese, 1/4 cup chopped pecans, and powdered sugar. Blend on medium speed for 3 minutes until smooth.


Form Truffles:

Roll the mixture into 1-inch balls and place them on a wax paper-lined baking sheet. Freeze for 15-20 minutes to firm up.

Dip in Chocolate:

Melt the white chocolate in a double boiler or microwave.

Using a fork, dip each truffle into the chocolate to coat, letting excess drip off. Place back on the wax paper.

Garnish and Set:

Sprinkle with remaining chopped pecans while chocolate is still wet.

Allow the chocolate to set and store in the refrigerator.
