Peanut Butter Cup Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup peanut butter
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
2 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
18 mini peanut butter cups, unwrapped
Instructions:
1 Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
2 In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
3 Add the eggs and vanilla extract, beating until well combined.
4 In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
5 Roll the dough into balls, about 1 inch in diameter, and place them onto the prepared baking sheet.
6 Gently press a mini peanut butter cup into the center of each dough ball, slightly flattening the dough.
7 Bake for 8-10 minutes, or until the edges are golden brown. The peanut butter cups should be slightly melted.
8 Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
