Pasta Salad
Ingredients:
1 lb rotini pasta
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/2 cup black olives, sliced
1/2 cup feta cheese, crumbled
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper to taste
Instructions:
1 Cook the pasta according to package instructions, then drain and cool under cold water.
2 In a large bowl, combine the cooled pasta, tomatoes, cucumber, onion, olives, and feta cheese.
3 In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
4 Pour the dressing over the pasta mixture and toss to coat.
5 Chill for at least 30 minutes before serving.
6 Serve cold and enjoy!
