Pasta Fazool Pasta e Fagioli
Ingredients:
2 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 medium carrot, diced
1 celery stalk, diced
1 15 oz can of cannellini or navy beans, drained and rinsed
1 15 oz can of diced tomatoes
4 cups vegetable broth
1 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper, to taste
1 cup small pasta e.g., ditalini or elbow macaroni
Fresh basil or parsley, chopped, for garnish
Parmesan cheese, for serving optional
Instructions:
1 Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrot, and celery until softened.
2 Stir in the beans, tomatoes, oregano, thyme, salt, and pepper. Simmer for 5 minutes.
3 Add the vegetable broth and bring to a gentle boil. Lower the heat and cook for 15 minutes.
4 Add the pasta and cook until tender, about 8-10 minutes, stirring occasionally. Adjust the seasoning as needed.
5 Serve hot with fresh basil or parsley on top and Parmesan cheese, if desired. Enjoy the coziness!
