Pan-Seared Lemon Tilapia with Parmesan Pasta

Ingredients:

For the Tilapia:

4 tilapia fillets

2 tbsp olive oil

2 garlic cloves, minced

Zest and juice of 1 lemon

Salt and pepper, to taste

1 tbsp fresh parsley, chopped for garnish

For the Parmesan Pasta:

12 oz spaghetti or your favorite pasta

1/2 cup grated Parmesan cheese


2 tbsp unsalted butter

1/4 cup pasta water reserved

Salt and pepper, to taste

Instructions:

1 Cook the pasta according to package instructions. Reserve 1/4 cup of pasta water, drain the rest, and set the pasta aside.

2 In a large skillet, heat olive oil over medium-high heat. Season the tilapia fillets with salt, pepper, and lemon zest.

3 Cook the fillets for 2-3 minutes per side until golden and cooked through. Remove from the skillet and set aside.

4 In the same skillet, add garlic and sauté for 1 minute, then squeeze in lemon juice.

5 Add the reserved pasta water and butter to the skillet, stirring to combine, then toss the cooked pasta in the mixture. Add grated Parmesan and mix well.

6 Plate the pasta and top with the pan-seared tilapia. Garnish with fresh parsley and serve immediately.
