Mini Taco Cornbread Cups

Ingredients:

For the Cornbread Cups:

1 cup cornmeal

1 cup all-purpose flour

1/4 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt 蓼

1 cup milk 拏

1/4 cup vegetable oil

1 large egg 讀

For the Taco Filling:

1 lb 450g ground beef 數

1 packet taco seasoning

1/2 cup water

1/2 cup canned corn kernels

For Toppings:

Sour cream 北

Diced tomatoes

Chopped fresh cilantro

Shredded cheddar cheese 燎

Instructions:


1 Make the Cornbread Cups:

1. Preheat your oven to 400F 200C and grease a muffin tin.

2. In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt .

3. Add milk 拏, vegetable oil , and egg 讀. Mix until smooth.

4. Spoon the batter into the muffin tin, filling each cup halfway.

5. Bake for 12-15 minutes, or until golden and a toothpick inserted comes out clean. Let cool slightly.

2 Prepare the Taco Filling:

1. In a skillet over medium heat, cook the ground beef until browned 數.

2. Drain excess fat and stir in taco seasoning and water . Simmer for 5 minutes.

3. Mix in the corn kernels and cook for 2 more minutes.

3 Assemble the Cups:

1. Gently hollow out the center of each cornbread muffin.

2. Fill each cup with a spoonful of the taco beef mixture.

4 Top and Serve:

1. Add your favorite toppings: sour cream, diced tomatoes , shredded cheese 燎, and fresh cilantro .

2. Serve warm and enjoy these festive mini taco bites!

Tips:

Add a sprinkle of jalapeños for a spicy kick .

Serve with salsa and guacamole on the side for dipping 陋.
