Mediterranean Fish Soup
A fragrant, flavorful fish soup packed with Mediterranean herbs, fresh vegetables, and tender fishperfect for a light and healthy meal!
Ingredients:
1 lb white fish fillets cod, haddock, or tilapia, cut into chunks
2 tbsp olive oil
1 small onion diced
2 cloves garlic minced
1 carrot sliced
1 celery stalk diced
1 can 14 oz diced tomatoes
4 cups fish or vegetable broth
1/2 cup dry white wine optional
1 tbsp fresh thyme or 1 tsp dried
1 tbsp fresh parsley chopped, plus more for garnish
1/2 tsp smoked paprika
1/2 tsp saffron threads optional, for extra flavor
Salt and pepper to taste
1 tbsp lemon juice
Instructions:
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery, cooking until softened.
Stir in diced tomatoes, fish broth, white wine if using, thyme, parsley, smoked paprika, and saffron if using. Bring to a simmer and cook for 10-15 minutes to allow the flavors to meld.
Add the fish chunks to the soup, cooking for another 5-7 minutes, or until the fish is cooked through and tender.
Season with salt, pepper, and lemon juice to taste.
Serve hot, garnished with extra fresh parsley and a squeeze of lemon.
