Maple Mustard Glazed Chicken Breast Stuffed with Brie & Apple

Ingredients:

4 boneless, skinless chicken breasts

100g brie cheese, sliced

1 apple Granny Smith or Honeycrisp, thinly sliced

2 tbsp fresh thyme leaves

Salt and pepper, to taste

2 tbsp olive oil

For the Glaze:

2 tbsp maple syrup

1 tbsp Dijon mustard

Instructions:

Prepare the Chicken:

Preheat your oven to 400F 200C.

Carefully cut a pocket into each chicken breast, being cautious not to slice through. Season both the inside and outside with salt and pepper.

Stuff the Chicken:

Place a few slices of brie and apple inside each pocket. Sprinkle in some fresh thyme leaves for added flavor.


Secure each stuffed chicken breast with toothpicks to help hold the filling in place, if necessary.

Sear the Chicken:

Heat the olive oil in an oven-safe skillet over medium-high heat.

Sear each chicken breast for 2-3 minutes per side until golden brown.

Add the Glaze and Bake:

In a small bowl, mix the maple syrup and Dijon mustard.

Brush the glaze over each chicken breast.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165F 74C.

Serve:

Remove the toothpicks, if used, and serve warm. This dish pairs wonderfully with roasted vegetables or a fresh green salad.
