Linzer Tart Cookies
Ingredients:
2 cups all-purpose flour
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/2 cup almond flour
1/2 cup raspberry jam or your choice of fruit preserves
Powdered sugar, for dusting
Instructions:
1 Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
2 In a bowl, whisk together the flour, cinnamon, nutmeg, and salt.
3 In another bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
4 Gradually add the dry ingredients and almond flour, mixing until combined. Form the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
5 Roll the dough out onto a lightly floured surface to about 1/8 inch thickness. Using a round cookie cutter, cut out cookies. Use a smaller cutter to cut out the center of half of the cookies to make a window for the jam.
6 Place cookies on the baking sheet and bake for 8-10 minutes, until lightly golden.
7 After cooling, spread a teaspoon of jam on the solid cookies. Top with the cookies that have the cut-out center. Dust with powdered sugar before serving.
