Lemon Pepper Cod
A light, zesty, and delicious seafood dish thats easy to prepare!
Ingredients:
4 cod fillets about 6 oz each
2 tbsp olive oil
2 tbsp lemon juice
1 tsp lemon zest
1 tsp freshly ground black pepper
1/2 tsp garlic powder
1/4 tsp paprika optional
Salt to taste
Fresh parsley chopped, for garnish
Lemon wedges for serving
Instructions:
Preheat your oven to 375F 190C and lightly grease a baking dish.
In a small bowl, mix the olive oil, lemon juice, lemon zest, black pepper, garlic powder, paprika if using, and salt.
Place the cod fillets in the baking dish and brush them generously with the lemon pepper mixture.
Bake for 12-15 minutes, or until the cod flakes easily with a fork.
Remove from the oven, garnish with fresh parsley, and serve with lemon wedges. Perfect with steamed vegetables or rice!
