Jumbo Shrimp and Asparagus

A light and elegant dish with tender shrimp and fresh asparagus, perfect for a healthy and quick meal!

Ingredients:

1 lb jumbo shrimp peeled and deveined

1 bunch asparagus trimmed and cut into 2-inch pieces

2 tbsp olive oil

3 cloves garlic minced

1 tbsp lemon juice

1/4 tsp red pepper flakes optional, for heat


Salt and pepper to taste

Lemon wedges for garnish

Instructions:

Heat 1 tbsp olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and fully cooked. Remove and set aside.

In the same skillet, add the remaining olive oil and the asparagus. Cook for 4-5 minutes, stirring occasionally, until tender-crisp.

Add the garlic and red pepper flakes, cooking for 1 minute until fragrant.

Return the shrimp to the skillet and stir in the lemon juice. Cook for another minute to combine flavors.

Serve immediately, garnished with lemon wedges, alongside rice or pasta if desired.
