– 1 cup hot brewed coffee, for deeper flavor

– 3/4 cup unsweetened cocoa powder Dutch-process preferred

– 1/2 cup vegetable oil or melted butter

– 2 large eggs, at room temperature

– 1/2 tsp baking soda

– 1 3/4 cups all-purpose flour

– A pinch of salt

– 1/2 cup sour cream or Greek yogurt, for added moisture

– 1 cup granulated sugar

– 1 tsp vanilla extract

For the Frosting Optional:


– 1/2 cup unsalted butter, softened

– 2 1/2 cups powdered sugar

– 23 tbsp whole milk or heavy cream

– 1 tsp vanilla extract

– A pinch of salt

Instructions:

1. Preheat the oven to 350F 175C. Prepare two 8-inch round cake pans by greasing and flouring them, or line the bottom with parchment paper for easy removal later.

2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and Dutch-process cocoa powder. Stir in the granulated sugar and packed light brown sugar until well combined.

3. In another bowl, beat the eggs, vanilla extract, and room temperature whole milk together. Slowly add in the vegetable oil or melted butter. Then, whisk in the sour cream or Greek yogurt until the mixture is completely smooth.
