Italian Sausage Tortellini
Ingredients:
1 lb Italian sausage mild or spicy
1 19 oz package of cheese tortellini fresh or frozen
1 cup heavy cream
1 14 oz can of diced tomatoes, drained
2 cups fresh spinach, chopped
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp Italian seasoning
1 tbsp olive oil
Salt and pepper, to taste
Instructions:
1 Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned, breaking it into small pieces.
2 Stir in the minced garlic and cook for 1 minute until fragrant.
3 Add the heavy cream, diced tomatoes, and Italian seasoning. Stir well and let simmer for 5 minutes.
4 Cook the tortellini according to the package instructions and drain.
5 Add the cooked tortellini and spinach to the skillet with the sausage mixture. Stir until the spinach wilts and everything is well coated in the sauce.
6 Top with grated Parmesan cheese, season with salt and pepper, and serve hot!
