Italian Pasta Salad
Ingredients:
3 cups cooked and cooled tri-color rotini pasta
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
1/2 cup mozzarella balls or cubes
1/4 cup red onion, finely chopped
1 cup diced cucumbers
1/3 cup green bell pepper, diced optional
For the Dressing:
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp dried oregano
1 tsp garlic powder
1/2 tsp Dijon mustard
Salt and pepper, to taste
Instructions:
1 In a large mixing bowl, combine the cooked pasta, cherry tomatoes, black olives, mozzarella, red onion, cucumber, and green bell pepper if using.
2 In a small bowl or jar, whisk together olive oil, red wine vinegar, oregano, garlic powder, Dijon mustard, salt, and pepper until well combined.
3 Pour the dressing over the pasta mixture and toss until everything is evenly coated.
4 Cover and refrigerate for at least 1 hour to let the flavors meld.
5 Serve chilled and enjoy this classic Italian side dish!
