Italian Chicken Sausage Soup with Tortellini
A warm and hearty soup perfect for cozying up on a chilly day!
Ingredients:
1 lb chicken sausage remove casings, crumbled
1 small onion diced
2 cloves garlic minced
4 cups chicken broth
1 can 14.5 oz diced tomatoes undrained
1 cup heavy cream or dairy-free alternative
2 cups frozen cheese tortellini
1/2 cup spinach fresh or frozen
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley or basil for garnish
Instructions:
In a large pot, cook the crumbled chicken sausage over medium heat until browned and cooked through, about 5-7 minutes. Remove from the pot and set aside.
In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.
Add the chicken broth, diced tomatoes with juices, heavy cream, Italian seasoning, salt, and pepper. Bring to a simmer.
Add the tortellini and cook for about 10 minutes, or until the tortellini is tender and floating.
Stir in the spinach and cooked chicken sausage, and let the soup simmer for 2-3 more minutes.
Adjust seasonings if needed, then serve hot, garnished with fresh parsley or basil.
