Italian Chicken Sausage, Peppers, and Onions

A vibrant and flavorful dish perfect for a hearty meal!

Ingredients:

1 lb chicken sausage sliced into rounds

2 tbsp olive oil

1 red bell pepper sliced

1 yellow bell pepper sliced

1 green bell pepper sliced

1 large onion sliced

3 cloves garlic minced

1 can 14 oz diced tomatoes with juice


1 tsp Italian seasoning

Salt and pepper to taste

1/4 cup chicken broth or water optional

Fresh basil or parsley chopped, for garnish

Instructions:

Heat olive oil in a large skillet over medium heat. Add the chicken sausage and cook until browned, about 5-6 minutes. Remove and set aside.

In the same skillet, sauté the bell peppers and onion until tender, about 6-8 minutes. Add the garlic and cook for 1 minute more.

Stir in the diced tomatoes, Italian seasoning, salt, and pepper. If needed, add a splash of chicken broth for extra moisture.

Return the cooked sausage to the skillet and simmer for 5-7 minutes, allowing the flavors to meld.

Serve as is, or over pasta, rice, or crusty bread. Garnish with fresh basil or parsley.
