Irresistible Strawberry Cheesecake Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
1/2 cup strawberry jam
1/2 cup cream cheese, softened
Directions:
Prepare the Oven and Baking Sheet: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper.
Cream the Butter and Sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is smooth and well combined.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Add White Chocolate Chips: Gently fold in the white chocolate chips until evenly distributed throughout the dough.
Prepare the Cream Cheese Mixture: In a small bowl, combine the softened cream cheese and strawberry jam, stirring until smooth and well blended.
Form the Cookies: Scoop about 1 1/2 tablespoons of cookie dough and flatten slightly in your hand. Add a small dollop about 1/2 teaspoon of the cream cheese and strawberry mixture in the center. Gently fold the dough around the filling to enclose it and roll into a ball. Place on the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake: Bake the cookies for 10-12 minutes, or until the edges are set and the tops are slightly golden. Be careful not to overbake to keep them soft and chewy.
Cool and Serve: Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Enjoy these strawberry cheesecake-inspired cookies fresh or store in an airtight container.
