1 box yellow cake mix plus ingredients required on the box, usually eggs, water, and oil
1 can 20 oz crushed pineapple, with juice do not drain
1 cup granulated sugar
For the Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
For the Topping:
1 cup chopped pecans or walnuts optional but recommended
1/2 cup sweetened shredded coconut optional, for extra texture
Directions:
Bake the Cake:
Preheat your oven to 350F 175C. Grease and flour a 9×13-inch baking dish.
Prepare the yellow cake mix according to the package instructions. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Prepare the Pineapple Syrup:
While the cake is baking, combine the crushed pineapple with its juice and granulated sugar in a medium saucepan. Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture thickens slightly, about 5 minutes. Remove from heat and set aside.
