Heres a fun and sweet recipe for Strawberry Snowball Cookiesperfect for any occasion!

Ingredients

1 cup 2 sticks unsalted butter, softened

1/2 cup powdered sugar plus extra for rolling

1 teaspoon vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

1/4 cup freeze-dried strawberries, finely crushed into powder

1/2 cup finely chopped fresh strawberries patted dry

Optional: Pink or red food coloring for a deeper hue

Instructions

Prepare the Dough:

In a large bowl, cream together the butter and powdered sugar until light and fluffy.

Mix in the vanilla extract.

In a separate bowl, whisk together the flour, salt, and strawberry powder. Gradually add this dry mixture to the butter mixture, stirring until combined.

Gently fold in the chopped fresh strawberries. If desired, add a small amount of food coloring for a vibrant pink hue.

Chill the Dough:

Cover the dough and chill in the refrigerator for 3060 minutes to make it easier to handle.

Shape the Cookies:

Preheat your oven to 350F 175C. Line a baking sheet with parchment paper.

Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.

Bake:

Bake for 1215 minutes, or until the bottoms are lightly golden. The cookies will still be pale on top.

Roll in Powdered Sugar:

Allow the cookies to cool for about 5 minutes, then gently roll them in powdered sugar while still warm. Place them on a wire rack to cool completely.

Once fully cooled, roll the cookies in powdered sugar again for a snowy finish.

Tips:

Storage: Store in an airtight container for up to 4 days. For longer storage, omit the fresh strawberries and use only the freeze-dried strawberry powder.

Add a drizzle of white chocolate for extra sweetness and decoration.

Make the strawberry powder by blending freeze-dried strawberries in a food processor or crushing them in a zip-top bag.

Enjoy your delightful Strawberry Snowball Cookies!
