Penne with Chicken and Pesto
Ingredients:
– 1 16 ounce package penne pasta
– 2 tablespoons olive oil
– 2 skinless, boneless chicken breast halves, cubed
– Salt and pepper to taste
– 1/2 cup pesto sauce
– 1/4 cup grated Parmesan cheese
– 1/4 cup sun-dried tomatoes, chopped optional
– Fresh basil, chopped for garnish
Directions:
1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
2. Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the cubed chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
3. Combine with Pesto: Lower the heat to medium-low and stir the pesto sauce into the skillet with the cooked chicken, coating the chicken evenly.
4. Toss with Pasta: Add the cooked penne to the skillet and toss to coat the pasta in the pesto sauce. If using sun-dried tomatoes, add them at this stage.
5. Serve: Remove from heat and sprinkle with grated Parmesan cheese. Garnish with fresh basil and serve immediately.
