Ham and Split Pea Soup

A warm, hearty soup perfect for colder months, filled with smoky ham and tender split peas!

Ingredients:

2 cups ham diced, cooked

1 1/2 cups dried split peas rinsed

6 cups low-sodium chicken broth

1 medium onion diced

2 carrots peeled and sliced

2 celery stalks diced

2 cloves garlic minced

1/2 tsp dried thyme


1 bay leaf

Salt and pepper to taste

Fresh parsley for garnish

Instructions:

In a large pot, combine the diced ham, split peas, chicken broth, onion, carrots, celery, garlic, thyme, and bay leaf.

Bring the soup to a boil, then reduce the heat and let it simmer, uncovered, for about 1 hour, or until the peas are tender. Stir occasionally.

Remove the bay leaf and season with salt and pepper to taste.

Use an immersion blender to slightly puree the soup, or leave it chunky based on your preference.

Serve the soup hot, garnished with fresh parsley.
