Grilled Scampi
A classic dish of succulent shrimp marinated in garlic, lemon, and herbs, then grilled to perfection. Great for a fresh and flavorful meal!
Ingredients:
1 lb large shrimp peeled and deveined, tails on
3 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic minced
1 tbsp fresh parsley chopped
1 tsp Italian seasoning
1/4 tsp red pepper flakes optional
Salt and pepper to taste
Lemon wedges for serving
Instructions:
In a bowl, combine olive oil, lemon juice, garlic, parsley, Italian seasoning, red pepper flakes if using, salt, and pepper. Mix well.
Add shrimp to the marinade and toss to coat. Let sit for 15-20 minutes.
Preheat a grill or grill pan to medium heat. Lightly oil the grates.
Thread shrimp onto skewers or place directly on the grill. Cook for 2-3 minutes per side, until the shrimp are pink and slightly charred.
Remove from the grill and serve hot, garnished with extra parsley and lemon wedges.
