Grandmas Cheesy Potato and Bacon Casserole
This rich, comforting dish is perfect for a family gathering or a cozy weeknight dinner. Its packed with layers of cheesy goodness and crispy bacon, just like grandma used to make.
Ingredients:
6 large potatoes, peeled and thinly sliced
1 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream
1 cup heavy cream
1 medium onion, thinly sliced
6 slices bacon, cooked and crumbled
2 cloves garlic, minced
2 tbsp fresh chives, chopped
Salt and pepper to taste
2 tbsp butter, for greasing the pan
Instructions:
Prepare the Potatoes: Preheat the oven to 375F 190C. Butter a large casserole dish and layer the bottom with half of the sliced potatoes. Sprinkle salt and pepper to taste.
Create the Cheese Mixture: In a bowl, combine cheddar cheese, mozzarella cheese, sour cream, heavy cream, garlic, and half the crumbled bacon. Mix well.
Assemble the Casserole: Spread half of the cheese mixture over the potatoes, followed by a layer of onions. Add another layer of potatoes and top with the remaining cheese mixture.
Bake: Cover the casserole dish with foil and bake for 45 minutes. Remove the foil, sprinkle the remaining bacon over the top, and bake for an additional 15 minutes until golden and bubbly.
Garnish and Serve: Once out of the oven, let the casserole cool slightly. Garnish with fresh chives and serve warm.
