Gluten-Free Sugar Cookies
Ingredients:
2 1/4 cups gluten-free all-purpose flour blend
1/2 tsp xanthan gum if not included in flour blend
1/2 tsp baking powder
1/4 tsp salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 1/2 tsp vanilla extract
1 tbsp milk dairy or non-dairy
Instructions:
1 Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
2 In a bowl, whisk together the gluten-free flour, xanthan gum if needed, baking powder, and salt.
3 In a separate bowl, cream the butter and sugar until fluffy. Beat in the egg, vanilla extract, and milk until smooth.
4 Slowly mix the dry ingredients into the wet ingredients to form a soft dough.
5 Roll out the dough between two sheets of parchment paper to about 1/4-inch thickness. Use cookie cutters to create your desired shapes.
6 Place cookies on the baking sheet and bake for 8-10 minutes or until edges are lightly golden.
7 Cool on a wire rack, decorate if desired, and enjoy!
