Ingredients:
1 large zucchini, halved
1 lb ground lamb
cup crumbled feta
cup pine nuts
2 tomatoes, chopped
1 sweet onion, chopped
1 can tomato sauce
1 tbsp olive oil
cup mint leaves
cup bread crumbs
cup shredded mozzarella
Instructions:
1 Preheat oven to 450F.
2 Scoop out zucchini pulp and sauté with lamb, onion, and garlic.
3 Mix in tomato sauce, feta, pine nuts, and mint. Fill zucchini halves with mixture.
4 Bake for 30 mins. Top with bread crumbs and mozzarella, then bake until golden.
