Fish in Foil

A simple and flavorful way to prepare fish, baked to perfection with vegetables and seasonings!

Ingredients:

4 white fish fillets e.g., tilapia, cod, or haddock

1 lemon sliced

2 tbsp olive oil

2 cloves garlic minced

1 tsp dried thyme or fresh thyme leaves

Salt and pepper to taste

1 cup sliced bell peppers assorted colors

1/2 cup cherry tomatoes halved


1 small zucchini sliced

Fresh parsley or basil for garnish optional

Instructions:

Preheat your oven to 375F 190C.

Cut large pieces of aluminum foil, enough to wrap each fish fillet individually.

Place each fish fillet on a sheet of foil. Drizzle with olive oil, and sprinkle minced garlic, thyme, salt, and pepper over the fillet.

Top the fish with lemon slices and arrange sliced bell peppers, zucchini, and cherry tomatoes around it.

Fold the foil over the fish and vegetables to create a sealed packet.

Place the foil packets on a baking sheet and bake for 20-25 minutes, depending on the thickness of the fillets, until the fish is cooked through and flakes easily with a fork.

Garnish with fresh parsley or basil if desired and serve directly from the foil packet.
