Fiery Fish Tacos with Crunchy Corn Salsa

Ingredients:

1 lb white fish fillets such as cod or tilapia

2 tbsp olive oil

1 tbsp chili powder

1/2 tsp paprika

1/4 tsp cayenne pepper

Salt and pepper, to taste

8 small corn tortillas

1 cup fresh corn kernels or canned

1/4 red onion, finely chopped

1/4 cup cilantro, chopped

1 small jalapeño, finely chopped optional


1 tbsp lime juice

1/2 avocado, sliced for garnish

Lime wedges for serving

Instructions:

1 Preheat the grill or a skillet over medium-high heat.

2 In a small bowl, mix the chili powder, paprika, cayenne pepper, salt, and pepper. Rub this spice mixture evenly over the fish fillets.

3 Drizzle olive oil over the fish and grill or pan-sear for 3-4 minutes per side, until cooked through and flaky.

4 In a separate bowl, combine the fresh corn kernels, red onion, cilantro, jalapeño if using, and lime juice. Toss to combine and set aside.

5 Warm the corn tortillas on the grill or in a skillet for about 1 minute on each side.

6 Assemble the tacos by placing pieces of cooked fish on each tortilla and topping with a generous spoonful of the crunchy corn salsa.

7 Garnish with avocado slices and serve with lime wedges on the side.
