Espinacas con Garbanzos Spinach with Garbanzo Beans
Ingredients:
2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 tsp paprika
1/2 tsp cumin
1 can 15 oz garbanzo beans chickpeas, drained and rinsed
4 cups fresh spinach, washed and chopped
1/2 cup vegetable broth or water
Salt and pepper, to taste
1/4 tsp red pepper flakes optional
Fresh parsley, chopped for garnish
Instructions:
1 In a large skillet, heat olive oil over medium heat. Add the onion and garlic, cooking until softened, about 5 minutes.
2 Stir in the paprika, cumin, and red pepper flakes if using and cook for another minute.
3 Add the garbanzo beans and vegetable broth, stirring to combine. Let the mixture simmer for 5-7 minutes, allowing the flavors to meld.
4 Add the spinach in batches, stirring to incorporate as it wilts. Continue cooking until the spinach is tender, about 5 minutes.
5 Season with salt and pepper to taste, and garnish with fresh parsley before serving.
