Eggnog Cookies
Ingredients:
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground nutmeg
1/2 tsp ground cinnamon
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/4 cup eggnog store-bought or homemade
1 cup powdered sugar for glazing
1-2 tbsp eggnog for glaze
Instructions:
1 Preheat your oven to 350F 175C and line baking sheets with parchment paper.
2 In a medium bowl, whisk together the flour, baking soda, salt, nutmeg, and cinnamon.
3 In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg, vanilla, and eggnog, and mix until smooth.
4 Gradually add the dry ingredients to the wet mixture, stirring until combined.
5 Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
6 Bake for 8-10 minutes, or until the edges are set and the tops are lightly golden. Cool on a wire rack.
7 For the glaze: mix the powdered sugar with 1-2 tbsp of eggnog until smooth. Drizzle over the cooled cookies.
