Easy Authentic Spanish Rice

Ingredients:

1 cup long-grain white rice

2 tbsp olive oil

1 small onion, finely chopped

1 bell pepper, chopped

2 cloves garlic, minced

1 cup tomato sauce

2 cups chicken broth

1 tsp paprika

1/2 tsp ground cumin


1/4 tsp chili powder optional

Salt and pepper, to taste

Fresh cilantro, chopped for garnish

Instructions:

1 Heat olive oil in a large saucepan over medium heat. Add the onion, bell pepper, and garlic, cooking until softened, about 5 minutes.

2 Stir in the rice and cook, stirring frequently, for 2-3 minutes, until the rice is lightly toasted.

3 Add the tomato sauce, chicken broth, paprika, cumin, chili powder if using, salt, and pepper. Stir well and bring to a simmer.

4 Once simmering, cover and reduce the heat to low. Cook for 18-20 minutes, until the rice is tender and the liquid is absorbed.

5 Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and garnish with fresh cilantro.
