Crispy and Creamy Doughnuts
Ingredients:
2 1/4 cups all-purpose flour
1/2 cup granulated sugar
2 tsp active dry yeast
1/4 tsp salt
1/2 tsp ground nutmeg
3/4 cup whole milk, warm
2 large eggs
2 tbsp unsalted butter, melted
1 tsp vanilla extract
Vegetable oil for frying
Powdered sugar or glaze for coating
Instructions:
1 In a small bowl, dissolve the yeast in the warm milk along with 1 tbsp of sugar. Let sit for 5-10 minutes until foamy.
2 In a large bowl, whisk together the flour, remaining sugar, salt, and nutmeg.
3 Pour the yeast mixture, melted butter, eggs, and vanilla into the flour mixture. Stir until a dough forms.
4 Knead the dough for about 5-7 minutes on a floured surface until smooth and elastic. Place in a lightly greased bowl, cover with a cloth, and let rise for 1-1.5 hours, or until doubled in size.
5 Roll the dough out to 1/2 inch thick on a floured surface. Cut out doughnut shapes using a doughnut cutter or two round cutters.
6 Heat oil in a deep fryer or large pot to 350F 175C. Fry doughnuts in batches for about 2-3 minutes per side, until golden brown and crisp.
7 Remove doughnuts from the oil and drain on paper towels.
8 Dust with powdered sugar or coat in glaze while still warm.
